Apple Rose Pastries - bloomin' great!

These delicious apple cakes are surprisingly easy to make and are perfect for Autumnal parties!  Here's how to make them:

What you'll need

  • 1 sheet of ready made puff pastry
  • 2 red apples
  • Juice of half a lemon
  • 1 tablespoon of flour
  • 3 tablespoons of apricot marmalade
  • 1 teaspoon of cinnamon
  • A sprinkle of icing sugar

Makes 6 roses.

Here's what to do

  1. Pre-heat oven to 180°C (gas mark 4)

  2. Ensure that the puff pastry is completely thawed. Sprinkle the flour on to a work surface and roll out the pastry in to a thin rectangular sheet

  3. Cut out 6 smaller rectangles approximately 30cm long and 7.5 cm wide with a pizza cutter or sharp knife

  4. Cut apple in half from top to bottom and remove the core. Keep the peel on as this adds colour to the finished roses! Then slice the apples finely in to crescent-shaped strips

  5. Place the apple slices in a microwaveable bowl and add water and the juice of half a lemon so that the slices are just covered.  Microwave on high for about 2 minutes until the apple slices have softened slightly.  Remove from the microwave and drain the water.  Cover the apple slices with cling film and place a tea towel on top (to keep them warm and flexible)

  6. Spread the apricot marmalade over the rectangular pastry strips and sprinkle with a fine layer of cinnamon

  7. Place apple slices along one long edge of dough rectangle, about 7mm over the edge of dough, overlapping slices slightly. Fold bottom half of the dough over the apple slices so the apple is sandwiched between the dough with the peel edges of the apple slices exposed

  8. Spread more apricot marmalade over the pastry strip and, starting from one end, roll the dough up, not too tightly, and you will see the apples start to form a rose-shape. Once rolled, seal the end with a small strip of leftover pastry.

  9. Place roses in to a buttered cupcake baking tray or similar and sprinkle with cinnamon or sugar to taste.

  10. Bake in the oven until the apple and dough become browned. We found a baking time of 45 mins is about right.

  11. Once browned, remove from the oven and allow to cool. Dust with icing sugar and serve
