Apple & Cinnamon Muffins

Muffins are always a favourite when it comes to picnics or afternoon tea in the garden. These apple and cinnamon muffins are a real treat and are very easy to make. Here's our favourite recipe.
What you'll need
- 1 apple
- 125g of plain flour
- 75g of butter
- 75g of caster sugar
- 175ml of milk
- 85g of porridge oats
- 1 egg
- 3 teaspoons of baking powder
- 1 teaspoon of cinnamon
- Zest of 1 orange
- Sprinkle of salt
How to make them

Pre-heat the oven to 180°C (gas mark 4)

In a bowl mix together the butter, milk, egg and sugar

In a separate bowl sieve together the flour, baking powder, cinnamon and salt and then stir in the oats (reserving a few to sprinkle on top of each muffin), apples and orange zest

Pour the wet ingredients onto the flour mixture and fold together as quickly as possible trying not to over mix (over mixing will result in a heavy muffin instead of a light one)

When everything is mixed together, pour the mixture into muffin cases to about three-quarters full, sprinkle the spare oats on top and bake for 20 -25 minutes until well risen and golden brown
