Mackerel Pate

A refreshing, creamy and light topping to fresh bread for the perfect summer snack or starter.
You'll need the following ingredients
- 1 packet of smoked mackerel
- 1 tub of cream cheese
- 4 spring onions - chopped
- ½ lemon - juiced
- Cracked black pepper
Here's what to do

This pate is great to make up and leave in the fridge for snacking on later in the week. I even heat it up and put it on pasta which the kids love.

Flake the mackerel into a bowl, making sure you get as many of the small bones out as you can.

Spoon in the cream cheese and add the lemon juice and spring onions

Mix it all together until it blends well and then add the pepper to taste

Best chilled in the fridge.
Optional extras
- Sprinkle some capers on top for extra seaside flavour
- Eat on a torn off piece of baguette, crusty loaf or a roll
